Red Beet Hummus

I’ve taught this recipe to many friends and it’s always a winner. With veggies, chips, on tacos, in wraps, by the spoonful, the possibilities are endless. I love ginger so I go heavy handed with it, some people like there to be less of a ginger kick. You decide.

Ingredients:

  • 4 medium-large sized beets, steamed and peeled *

  • A lot of fresh ginger, peeled and thin sliced or grated on a microplane

  • 1-3 cloves of garlic

  • onion salt

  • juice of 2-3 limes

  • 1/4-1/2 cup tahini, more or less

  • splash of olive oil

  • salt and pepper

  • 2-3 tbsp of red wine vinegar - OPTIONAL (just gives it a nice tang!)


Place all ingredients in nutribullet or high power blender until smooth (the better your blender, the smoother the hummus will be). Add water if/as needed to get desired consistency.


This recipe, again, is meant to be a guideline or backbone for YOU to explore and develop your culinary intuition! You might want more ginger, or more lime, or less garlic - try things out and TASTE as you go! And don’t forget salt!


*I buy fresh raw beets, quarter them and steam in my instant pot. Once cooled I remove the skins (they come right off). You can also steam in a steam basket or simply buy packaged cooked and peeled beets from the store!
